Brian Dwiggins founded Borealis in 2016, in a restored 1850s train depot in Riverside, Rhode Island, after years of home-roasting and a real itch to do this for keeps. He and the team cup every week at their Pawtucket roastery, build farm-direct relationships at places like Finca El Jardín in Guatemala and Finca La Capilla in Colombia, and ship coffee at its 4-to-12-day flavor sweet spot, never straight off the cooling tray, because that's when it really sings. I love that kind of nerdy patience — it's exactly what you do when you actually care. In the cup, expect clean, light-to-medium-roasted coffees that get out of the bean's way. Almond, cocoa, stone fruit, and a soft, lingering sweetness that turns one cup into three. Plush, gentle, and quietly sweet — like a really good croissant on a slow Sunday morning.
