The Art of Darkness

Curator's Notes

Scott McMartin spent twenty years at Starbucks buying coffee — over a billion pounds of it, across 20 producing countries and roughly 2,000 farms. He's seen it all, knows everyone, and in 2014 decided to take everything he learned and apply it to something smaller, more personal, and more artful. Fundamental Coffee is his love letter to the dark roast, a style Scott believes is a vanishing art in an industry increasingly obsessed with light and fruity. Roasting small batches on drum roasters in Seattle, tasting every single one, and sourcing from growers he's known for decades, Scott brings the expertise of a coffee giant to the craft of an independent. As one Bean Box customer put it: "One of the darkest, velvety-rich, smoothest cups I've had." In the cup, expect masterfully crafted dark roasts with depth, balance, and the confidence of someone who has roasted a lot of coffee.

From the Roaster

I’ve spent the better part of two decades buying coffee; I figure I’ve bought well over a billion pounds, and I’ve traveled to over 20 coffee producing countries and visited probably 2,000 farms. The range of experiences I’ve had, which run the gamut from thrilling to terrifying to hilarious to heartbreaking leave me overwhelmed with respect for all the people (25 million plus, worldwide) in the coffee business. I started Fundamental Coffee in 2014 with a passion for preserving the seemingly vanishing art of dark roast coffee. We buy, source and blend the world's finest coffees from people I've known since my early days in the business. We roast small batches on drum roasters and taste every batch because we care and wouldn't serve anything we're not proud of. We believe that without quality and beneficial relationships between the environment, growers, sellers, and buyers the coffee business will cease to exist and that would without question suck. Thanks for trying us out.

"This was good, but not exceptional coffee. I agree that using a french press brings out the best flavor. The earthy flavors were a bit muted for my liking. "

"Very enjoyable dark roast. Complex, dark, intense, but some complex notes and spice notes found in many other similar coffees. Interested to try other Fundamental coffees. "

"I taste chocolate, nuttiness with a hint of smoke after dialing it in espresso with milk. A fairly complex drink for a dark roast. It’s also VERY dark and oily, which I don’t mind. Probably one of my favorite dark roasts. "
