Roaster's Notes
Before coffee cherries form, you can find fields of coffee trees blooming with flowers that give off an intoxicating fruity and floral fragrance. Most coffee lovers don’t get to experience this, so Diego Robelo found a way to introduce this experience into his coffee. By isolating the wild yeasts in coffee flowers he created a microbial culture that is added to the coffee’s fermentation process. It’s the kind of flower power we can all get behind.
