Why I'm Obsessed: After a summer of fruity co-ferments and iced everything, there's something deeply satisfying about coming home to a cup like Tony's Mexico Chiapas. There's a sweet boldness about this perfectly medium-roasted, chocolaty coffee, with a nice creamy mouthfeel and a cozy, nutty profile with just a touch of caramelized brown sugar spice. Want to drink it black? Done. Want to add creamer and maybe your favorite fall syrup? Done. Want to pull it as espresso, make a cold brew, or whip up some coffee cocktails? Done, done, and (definitely) done. This is the single origin that drinks like a perfectly-formulated blend, and you'll want to come back to it again and again.

Chiapas is Mexico's coffee heartland: high-altitude, volcanic, shade-grown coffee in the Sierra Madre along the Guatemala border, mostly from smallholder cooperatives. It's also the most-awarded region in Mexico's Cup of Excellence, taking first place in both 2019 and 2021. And, fun fact: Mexico has long been the world's biggest producer of certified organic coffee, with modern fair trade certification itself born from a Mexican coop in 1988. Fair Trade Organic isn't a label in Chiapas, it represents the birthplace of the movement. This lot comes from FEDESI, a federation of cooperatives founded by small producers to get their coffee to market on fair terms.
